  1. Pre-heat the oven to 190°C (170°C for a fan oven)
  2. Peel and chop the apple into small chunks. Pre-cook on the hob over a low to medium heat for around 10 minutes, or until the apple just starts to go mushy, but still has distinct chunks.
  3. Mix together all the other ingredients whilst the apple is cooking. I tend to start with the dry ingredients, then add the wet ingredients. The coconut butter will first need to be melted in the microwave or on the hob. It will start to melt at around 30°C, but make sure it doesn’t heat up too much – otherwise the flour will start to cook too early!
  4. Once the apple has finished pre-cooking, mix it in with the other ingredients.
  5. Place spoonfuls of the mixture onto an oiled baking tray, leaving space for expansion.
  6. Bake in the pre-heated oven for 8-12 minutes until golden around the edges, and slightly firm to touch.
  7. Leave to cool on a plate or cooling rack.
Recipe Notes

You can use sunflower oil in place of coconut butter. However, we feel that the sunflower oil makes the cookies slightly heavier, whereas the coconut butter keeps them light.

They tend not to brown much, so don’t put them in for too much longer just so they brown more. This tends to dry them out quite a lot rather than keeping them slightly moist. They should brown around the edges, and be slightly firm to touch.

Plain Cinnamon

If you would prefer just plain Cinnamon and Honey cookies, you can leave out the apple, and take the cinnamon down to just 2 teaspoons (or keep it at 3 if you like a strong cinnamon flavour!). All other ingredients stay the same.
